PICKLED BEETROOT
Ingredients:
4 beetroots, scrubbed clean
1/2 cup white wine vinegar
2 tsp sugar in the raw
1/4 teaspoon ground clove
1 tsp cumin
pinch of salt

Instructions:
Boil the beets until tender (25-30 mins)
Let beets cool and then peel off the skin
Grate or slice the beets (I like to grate them pierced on a fork because they are messy!)
Put beets in a sealable jar
Combine all other ingredients in a saucepan and boil for 5 minutes
Pour the liquid over the beets
Leave to cool
Seal and refrigerate.

PICKLED BEETROOT HUMMUS
Ingredients:
1/2 cup pickled beetroot
1 can chickpeas/garbanzo bean, drained
2 tablespoons tahini
2 cloves garlic, crushed
Juice of half a lemon
Water

Instructions:
Blend all ingredients, except for the water
Add water to achieve desired consistency
